Recipes - Hot Puddings - Malva Pudding



Ingredients:

50 g butter or margarine
125 ml sugar
1 extra large egg
15 ml apricot jam
5 ml vinegar
250 ml cake flour
3 ml salt
5 ml bicarbonate of soda
250 ml milk

Sauce:

170 g can of evaporated milk
100 ml sugar
5 ml vanilla essence


Method:

Cream butter and sugar. Add egg, beating until light and fluffy.
Mix in jam and vinegar. Sift dry ingredients and add, with milk,
beating until smooth. Spoon into a greased medium ovenproof dish and
bake in a preheated oven at 180º C for 30 to 40 minutes.

For sauce: Heat evaporated milk and sugar until the sugar melts.
Remove from heat and add the vanilla essence.
Pour sauce over the top as soon as the pudding is taken out of the oven.
