Recipes - Cold Puddings - Lemon Cheese Cake



Ingredients:

3 tins condensed milk
3 tubs smooth cottage cheese
1 1/4 cups lemon juice
10 teaspoons gelatine
1 Lt cream
1 teaspoon lemon rind


Crust:

1 packet tennis biscuits (crushed)
150 mls melted butter


Method:

Mix melted butter and tennis bisuits, line tart dish and sides.
Whisk together condensed milk, cottage cheese and lemon juice.
Add 1 cup cold water to the gelatine, heat in the microwave for 1.5 mins
do NOT boil. Add this to the cheese mixture.
Whip cream and fold into the cheese mixture, pour into lined tart dish
and freeze. Sprinkle crushed tennis biscuits on top when serving.
